TECHNICAL INFORMATION ON SAN MARINO COOKED HAM

Raw material: Italian hams with PP, the same used for the best prosciutto hams with Protected Denomination of Origin, top quality. Selected by our skilled personnel.

Production process
: original, called “no hurry, no comparison”, lasting 31 days and which makes the product so digestible thanks to the greater quantity of free amino acids compared to the traditional production process which instead lasts only 7 days. Manual syringing in vein, less “invasive” than the traditional method and which allows a “natural” flow of the salt through the veins in the ham. This procedure maintains the quality and organoleptic characteristics of the raw material at their best.
No churning with slow enzyme transformation.

Outer appearance
: original shape, patented, recalling that of a prosciutto ham. Very recognisable at the cutting counter. With branded skin.
Without bone and shank

: the product is therefore also suitable for anyone suffering from food allergies, including coeliac sufferers.
